Oshizushi Maker Prototype

May 25, 2026

For the past five years, I’ve been creating and serving vegan sushi with seasonal vegetables at markets and catering events, while also exploring regional sushi design with AI. Recently, I started designing an open-source oshizushi (pressed sushi) maker and tested the first 3D-printed prototype by serving black sushi during WGT at the KüfA dinner hosted by “Das Japanische Haus” in Leipzig. The next step is developing a washable, compact wooden version for future use.

I love making sushi with seasonal vegetables, and for around the past five years I’ve been serving it at markets and catering events. Last year, I did a project to design regilnal Sushi with AI.

Alongside that, recently I started designing an Oshizushi (pressed sushi) maker. Eventually I plan to produce it in wood, but first I made a 3D-printed prototype to test the size and proportions.

I actually used this oshizushi maker during Wave Gotik Treffen (WGT) to serve a black sushi plate at the KüfA community dinner hosted by the cultural center “Das Japanische Haus” in Leipzig. The size worked really well. Big thanks to the das Japanische Haus e.V. to let me do the experiment!

For anyone who would like to try making it themselves, I’m sharing the STL data here:

Now the next step is designing a wooden version that is easy to wash and compact to store. I’m planning to make the pattern open source, so stay tuned!
